Steak sous vide

1 lb Beef top sirloin steak
1 tbsp fresh ground pepper, coarse
1 tbsp Kosher Salt
2 Fresh rosemary sprigs
2 tbsp Unsalted butter
Heat sous vide bath to 132 deg F Sprinkle steak generously with pepper and salt and press into the meat. Place in plastic bag, add fresh rosemary on both sides and half of the butter (keep 1 tbsp for searing later). Remove the air from the bag, seal and place in sous vide bath. Cook for 1h30 min minimum - max 4 hours. When ready to eat, heat up a cast iron skillet on high heat. Take the steak out of the bag and pat it dry. Throw the rest of the butter in the pan and add the steak. Sear for about one minute on each side and the thin sides as well. Slice in 1/2" thick slices and serve. You can serve with a sauce made in the pan if you want, while the steak is resting covered on a wood board.
