How does the Marinate feature work on the V23?

The Marinate feature on the V23 uses a cycle of vacuum and release to infuse foods with seasonings, marinades, or pickling solutions. The process requires a vacuum canister with an Unlocked or Open feature on the valve and is suitable for the hose nozzle in configuration 2 (https://www.vestaprecision.com/blogs/faq/using-the-multi-function-accessory-hose-in-the-v22-and-v23-sealers).

The Marinate process is designed around three 6-minute cycles. To begin, the canister is vacuumed, which opens the cell walls for the seasoning, marinade, or pickling solution to penetrate. The vacuum is held for five minutes, with the pump running periodically to maintain it. Then, over the sixth minute, the vacuum is slowly released to allow the cells to recover and draw in the marinade, before the pump is restarted to place the contents in the canister under vacuum again. After three 6-minute cycles, three beeps will signal the process is complete and the canister will be at normal pressure and not under vacuum.
