Sous Vide Texas Style Short Ribs

PREP TIME: 20 minutes

COOK TIME: 24 hours +

INGREDIENTS:

  • 4 Texas style short ribs
  • BBQ rub of choice
  • BBQ sauce of choice

PREPARATION:

  1. Preheat water bath using immersion circulator to 170 degrees F. Make sure a trivet is under the water bath, as this is a long cook at a high temperature.
  2. Thoroughly season short ribs with your BBQ rub. Vacuum seal short ribs in vacuum seal bag safe for cooking.
  3. Add the short ribs to the water bath and cook for 24 hours. Make sure water bath is covered with a lid or plastic wrap as water will evaporate.
  4. When finished, remove short ribs from bag. If you have a smoker, you can smoke to finish at 200 degrees F for 3-4 hours, basting with BBQ sauce every hour. To finish in the oven, preheat oven to 400 degrees F. Cover the ribs with BBQ sauce and place on a foil lined baking sheet. Bake for 20 minutes, or until outside darkens in color and crisps.
