Sous Vide Texas Style Short Ribs
PREP TIME: 20 minutes
COOK TIME: 24 hours +
- 4 Texas style short ribs
- BBQ rub of choice
- BBQ sauce of choice
- Preheat water bath using immersion circulator to 170 degrees F. Make sure a trivet is under the water bath, as this is a long cook at a high temperature.
- Thoroughly season short ribs with your BBQ rub. Vacuum seal short ribs in vacuum seal bag safe for cooking.
- Add the short ribs to the water bath and cook for 24 hours. Make sure water bath is covered with a lid or plastic wrap as water will evaporate.
- When finished, remove short ribs from bag. If you have a smoker, you can smoke to finish at 200 degrees F for 3-4 hours, basting with BBQ sauce every hour. To finish in the oven, preheat oven to 400 degrees F. Cover the ribs with BBQ sauce and place on a foil lined baking sheet. Bake for 20 minutes, or until outside darkens in color and crisps.
